Basic Lemonade

Serves 10
INGREDIENTS:

  • 6 lemons
  • 1 cup sugar
  • 8 cups ice water
  • 1 cup boiling water

DIRECTIONS:

  1. Squeeze juice from lemons into a bowl. Set lemon rinds aside; strain lemon juice into a large pitcher.
  2. Add sugar and ice water; stir until sugar is dissolved. Set aside.
  3. Place lemon rinds in a bowl and add warm water. Let stand until water is cold.
  4. Discard rinds, add water to picher and stir well. Refrigerate until well chilled.

Perfect Lemonade

Serves 6:

The perfect lemonade? As sweet as you like it!!! Squeeze some lemons, add sugar and water. But how to make lemonade so that it tastes right everytime? Here's a sure method.
Remember the starting proportions - 1 cup of sugar, 1 cup of water, 1 cup of lemon juice.

(This ratio makes a pretty sweet lemonade. Reduce the amount of sugar if you want your lemonade less sweet or if you are using Meyer lemons which are naturally sweeter than standard lemons.)

The secret to perfect lemonade is to start by making sugar syrup, also known as "simple syrup". Dissolving the sugar in hot water effectively disperses the sugar in the lemonade, instead of having the sugar sink to the bottom.

In a small saucepan heat the sugar and water until the sugar is dissolved completely. While the sugar is dissolving, use a juicer to extract the juice from 4 to 6 lemons, enough for one cup of juice. Add the juice and the sugar water to a pitcher. Add around 4 cups of cold water, more or less to the desired strength. Refrigerate 30 to 40 minutes.

Serve with ice, sliced lemons.

Pink Lemonade

INGREDIENTS:

  • 2 cups sugar
  • 9 cups water
  • 2 cups lemon juice
  • 1 cup cranberry juice

DIRECTIONS

Mix everything in a pitcher and stir until dissolved. Serve lemonade over ice.

Old-Fashioned Lemonade

Serves 6

INGREDIENTS

  • 6 lemons
  • 1 cup white sugar
  • 6 cups cold water

DIRECTIONS

  1. Juice the lemons to make 1 cup of juice. To make your labor easier, FIRMLY roll the lemons between your hand and counter top before cutting in half and juicing.
  2. In a gallon pitcher combine 1 cup lemon juice, 1 cup sugar, and 6 cups cold water. Stir. Adjust water to taste. Chill and serve over ice.

Strawberry Lemonade

Serves 6

INGREDIENTS

  • 1 can (12 ounce size) frozen lemonade concentrate, thawed
  • 4 and 1/2 cups water
  • 1 package (10 ounce size) frozen strawberries, partially thawed

DIRECTIONS

In a large pitcher, mix together lemonade concentrate and water. Stir in strawberries.. Pour over ice cubes in each glass. Serve.

Raspberry Lemonade

INGREDIENTS

  • 2 (12 ounce) cans each frozen lemonade concentrate, thawed
  • 2 packages (10 ounce) each frozen sweetened raspberries, partially thawed
  • 4 tablespoons sugar
  • 2 liters club soda, chilled
  • Ice cubes

DIRECTIONS

In a blender, combine lemonade concentrate, raspberries and sugar. Cover and process until blended. Strain to remove seeds. In a 4-1/2 qt. container, combine raspberry mixture, club soda and ice cubes; mix well. Serve immediately.

Cherry Lemonade

Serves 6

INGREDIENTS

  • 1 cup hot water
  • 3/4 cup sugar
  • 4 cups cold water
  • 1/2 cup fresh lemon juice
  • 6 ounces maraschino cherries - undrained

DIRECTIONS

In a large pitcher, combine hot water and sugar; stir until sugar is dissolved. Add cold water, lemon juice and cherries with their juice; mix well. Serve over ice.

Microwave Lemonade

INGREDIENTS

  • 1 and 1/4 cups hot water
  • 1 and 1/2 cups sugar
  • 8-9 lemons, rinsed
  • lots of ice cubes

DIRECTIONS

  1. In a 1-quart bowl combine sugar and 1 1/4 cups hot water.
  2. Micro and stir occasionally, until sugar is dissolved, 1 to 2 minutes.
  3. Meanwhile, zest 1 tablespoon lemon peel (yellow part only) from 2 or 3 lemons.
  4. Add peel to warm sugar mixture; let cool about 10 minutes.
  5. Cut all lemons in half and ream enough juice to make 1 3/4 cups.
  6. Add to sugar mixture.
  7. Into a pitcher add lots of ice cubes, lemon syrup, 1 cup ice cold water.
  8. Stir lemon slices into lemonade & pour into glasses with garnish of mint.
  9. Taste -- you may want to add more water.

Sugarless Lemonade

Serves 25

INGREDIENTS

  • 1 cup Lemon juice (5-6 lemons)
  • 1/2 cup water
  • zest from 1 lemon
  • Equivalent artificial sweetner to equal 1 cup of sugar

DIRECTIONS

  1. With a vegetable peeler or sharp knife, peel yellow rind from lemon in thin strips.
  2. In a saucepan, combine rind, juice and water; bring to a boil, reduce heat and simmer about 3 minutes.
  3. Cool, strain and stir in sweetener. Store in glass jar or bottle in refrigerator. Makes 1-1/2 cup concentrate, enough for 25 drinks.
  4. To make lemonade: Mix 1 tbsp. syrup to 1 cup water.
